Philly Cheesesteak Pizza

1 (15-oz) pkg already-rolled-out bakery pizza dough
1 lb top sirloin, thinly sliced
1 green bell pepper, thinly sliced
1/3 onion, thinly sliced
Garlic to taste
3 Tbsp spicy brown mustard OR sauce below
1 (8-oz) pkg sliced provolone cheese
1 1/2 cups shredded mozzarella cheese
1+ tsp Montreal steak seasoning

Sauce
1 tablespoon butter
1 tablespoon flour
1/2 cup cold milk
1-3 cloves garlic, pressed
1/8 teaspoon salt
a pinch of black pepper AND nutmeg
1/4 cup parmesan cheese

Preheat oven to 450°F. Press pizza dough out onto a large lightly greased pizza pan. Bake 10 minutes.

Meanwhile, cook beef, bell pepper, garlic, steak seasoning to taste, and onion in a large skillet over medium heat until meat is browned.

If making sauce:
Melt the butter in a small saucepan over medium heat. Whisk in the flour and let cook for 1 minute or until it smells like baked pie dough. Slowly stream in the cold milk while you whisk. Add the pressed garlic and allow the sauce to come to a gentle simmer. Season with salt, pepper, and nutmeg. Remove the sauce from the stove; whisk in the parmesan cheese.

Spread mustard over baked crust; top with provolone cheese, meat mixture, and mozzarella cheese. Sprinkle with steak seasoning.Bake 8 minutes or until crust is golden brown and cheeses are melted.
