1 medium yellow pepper, chopped
1 medium green pepper, chopped
EVOO
Bread
2 tbsp. mayonnaise
1 cup fresh salsa
3/4 cup shredded Mexican blend cheese
2 tbsp. butter, softened
Saute peppers in oil until tender. Spread bread with mayonnaise. Layer with peppers, salsa and cheese. Cook sandwiches until cheese is melted.
