Chipotle Black Bean Burgers

1 pound ground meat (we used pork, but go with beef if you want to – I’m not responsible for your decisions)
1 egg
1-2 chipotle peppers
2 cloves garlic
1 tsp cumin
1/2 can black beans
1 slice of bacon for each burger (plus however much you want to make for the pre-dinner snack)
1 medium onion (we used red onion)
Extra virgin olive oil
BBQ Sauce
Cheese

Heat up some olive oil in a skillet, then add black beans, garlic and one of the peppers, diced. Cook through, then mash beans. Set aside as long as you feel – we did this a couple hours in advance so it could cool down before we mixed it in with the meat.

Cook the bacon and cut in half when finished.

Mix the beans with the ground meat and cumin and cook to preference. While the burgers are cooking, cook onion in the skillet with olive oil and the other diced chipotle pepper (if you choose – I thought it was incredible, Liz suggested not using a pepper with the onions).

Top with cheese just before finished to get it good and melted. Pile on bacon, onions and BBQ sauce. Prepare for a mouth full of delicious.
