Cinnamon Rolls

Basic Sweet Dough
1 1/2 c. milk
1/4 c. margarine
2 T. yeast
2 eggs
1/2 c. warm water
7 – 7 1/2 c. flour
1/2 c. sugar

Bottom of cinnamon rolls.
1 c. margarine
2 large pkg. vanilla pudding (not instant)
2 c. brown sugar
4 T milk
Cinnamon to taste


Dissolve yeast in warm water. Let stand 5 minutes. Place milk & margarine in microwave bowl, and heat until margarine is melted, about 2 minutes. Test milk to make sure it is not too hot (like you would water for a babies bath – that is about how hot you want it to be). When it is the correct temperature, add the sugar and yeast mixture. Beat the eggs in the measuring cup that the yeast was in, and then add them to the sugar and milk. Add 1/2 of the flour and beat with a wire whip until it is smooth. Add remaining flour and knead with your hands until smooth. You might not need all of the flour – you just want it so that it isn’t too sticky. Grease the bowl, cover it with a towel, and let it rise until doubled (about 1 hour). Punch it down and make into cinnamon rolls.

Before you roll out the dough – make the stuff for the bottom of the rolls in the two cake pans that you are going to cook them in.

For each pan of goop, use half of ingredients. Melt margarine in the bottom of the cake pan. Add the other ingredients and mix well. Put cinnamon rolls on top of this. Bake at 350 degrees for about 30 minutes, or until they are brown. Turn them onto a cookies sheet when they are done.

To make the cinnamon rolls, roll out half of the dough until it is about 1/4 in thick. If you roll it out in a rectangle, it will be easier to handle. Make sure you flour the counter or whatever you are rolling it out on, and then sprinkle the top with flour too, so your roller doesn’t stick. Sometimes I flip the dough over while I am rolling it out, but you don’t have to. Once you have it rolled out, spread soft margarine on the dough, and them sprinkle it with the sugar and cinnamon mixture. (1/2c. sugar to 1T cinnamon)

Now roll the dough into a jelly roll and slice the cinnamon rolls. They should be about 1″ slices.
