1 lb ground chicken
2 cups sweet potato finely shredded (about 2-3 sweet potatoes)
2 tbsp coconut oil
2 tbsp coconut flour
2 scallion sprigs finely chopped
1 tbsp garlic powder
1 tbsp onion powder
1 tsp chili powder
1 tsp sea salt
Preheat oven to 400 degrees. Prepare a baking sheet with parchment paper or silicone liner and set aside.
Put all ingredients to a large bowl and use clean hands to mix well. Scoop out heaping tablespoons of the mixture and roll them into a balls. Place on baking sheet and gently flatten into nugget shapes. Bake nuggets in the preheated oven for 24-27 minutes, and flip half way through to lightly brown both sides.
Allow nuggets to cool for 5-10 minutes before serving.
