1 tbsp EVOO
1 pound ground sirloin
1 large onion, chopped
1/4 cup steak sauce
1 cup beef stock
2 tbsp butter
2 tbsp flour
1 cup milk
1 cup shredded provolone

Heat EVOO in large skillet over medium-high heat. Add meat and brown for 5-6 minutes. Add onion, cooking until tender, 5-6 minutes. Stir in steak sauce and beef stock, bring to a bubble and cook 2 minutes more.
Melt butter in small skillet over medium heat. Stir in flour and cook about 1 minute, then whisk in milk and let come to a bubble. Add cheese, stirring.
