1 T Sriracha hot sauce
1/4 cup honey
juice of one lemon
1/8 cup of extra virgin olive oil
Salt + Pepper
2 ears of fresh corn, corn shaved from cob
1 cup black beans
1 ripe avocado chopped
1/4 cup chopped tomatoes
In a medium bowl combine Sriracha, honey and lemon juice. Whisk to combine. Slowly add olive oil. Mix well. Add Salt and Pepper to taste. Pour over the rest of the ingredients. Toss and enjoy immediately, or refrigerate for 1 hour or overnight. Salad will get spicier as it sits!
