2 tablespoons vegetable oil, plus oil to saute
2 boneless, skinless chicken breasts
Salt and pepper
1 (12-ounce) ready-made pizza crust
1/4 cup soy sauce
1/2 cup+ peanut butter
1/4 cup hot sauce
Crushed red pepper, to taste
1 cup unsalted peanuts, chopped
1/2 green bell pepper, chopped
4 tablespoons honey
4 tablespoons rice wine vinegar or cider vinegar
4 cloves garlic
2 cups mozzarella, shredded
Preheat oven to 400 degrees F.
Heat a skillet over medium-high heat. Add enough oil to lightly coat the bottom of the pan. Cut chicken into small cubes. Season the chicken breast with salt, pepper and 2 cloves garlic and cook until cooked through.
While chicken is cooking, mix pepper, honey and vinegar. Set aside.
Remove chicken from skillet. Add peanut butter, 2 tbsp. vegetable oil, hot sauce, soy sauce and crushed red pepper and simmer 2 minutes. Add chicken and remaining 2 cloves garlic, mix and simmer 5 minutes.
Roll out the pizza dough and press into a 10-inch pizza pan.
Spread the chicken and sauce over pizza. Top with green peppers, peanuts and cheese. Bake until cheese is melted and crust is browned, about 10 minutes.
