{"id":1120,"date":"2025-03-16T02:00:08","date_gmt":"2025-03-16T02:00:08","guid":{"rendered":"https:\/\/kayeskinner.com\/food\/lemon-ricotta-pancakes\/"},"modified":"2026-03-28T02:41:20","modified_gmt":"2026-03-28T02:41:20","slug":"lemon-ricotta-pancakes","status":"publish","type":"post","link":"https:\/\/kayeskinner.com\/food\/lemon-ricotta-pancakes\/","title":{"rendered":"Lemon Ricotta Pancakes"},"content":{"rendered":"<h2>Sauce<\/h2>\n<p>1 1\/2 tablespoons fresh lemon juice<br \/>\n1 1\/2 teaspoons cornstarch<br \/>\n2 cups blueberries, strawberries, or fruit of your choice<br \/>\n2-3 tablespoons granulated sugar<br \/>\n2 tablespoons water<\/p>\n<h2>Pancakes<\/h2>\n<p>1 1\/4 cups all-purpose flour<br \/>\n3 tablespoons granulated sugar<br \/>\n2 teaspoons baking powder<br \/>\n1\/2 teaspoon baking soda<br \/>\n1\/4 teaspoon salt<br \/>\n1 cup ricotta cheese<br \/>\n1 large egg<br \/>\n2 large egg whites<br \/>\n1\/2 cup fresh lemon juice<br \/>\n2 teaspoons grated lemon zest<br \/>\n1 tablespoon canola oil<br \/>\n<!--more--><br \/>\nIn a small bowl, combine the lemon juice and cornstarch and set aside.<\/p>\n<p>In a medium saucepan, combine the blueberries, sugar, and water. Bring to a boil over high heat. Reduce to a simmer and stir in lemon juice and cornstarch mixture. Stir until the sauce thickens slightly.  Cover to keep warm and set aside.<\/p>\n<p>In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt.<\/p>\n<p>In a medium bowl, whisk together ricotta cheese, egg, egg whites, lemon juice, lemon zest, and canola oil. Gently fold this mixture into the dry ingredients until flour disappears. Don&#8217;t over mix. The batter will be thick.<\/p>\n<p>Heat a griddle or a nonstick skillet over medium heat. Spray with cooking spray.  Drop about 1\/3 cup of batter onto the hot griddle or skillet. Cook the pancakes until browned on the underside and beginning to set, about 2 minutes. Flip and cook the pancakes on the other side, about two minutes longer.
