{"id":1151,"date":"2025-03-16T02:00:09","date_gmt":"2025-03-16T02:00:09","guid":{"rendered":"https:\/\/kayeskinner.com\/food\/avocado-potato-salad\/"},"modified":"2026-03-28T02:38:40","modified_gmt":"2026-03-28T02:38:40","slug":"avocado-potato-salad","status":"publish","type":"post","link":"https:\/\/kayeskinner.com\/food\/avocado-potato-salad\/","title":{"rendered":"Avocado Potato Salad"},"content":{"rendered":"<p>4 slices bacon, diced<br \/>\n2 avocados, halved, seeded and peeled<br \/>\n1\/4 cup chopped fresh cilantro leaves<br \/>\n2 plus 2 tablespoons olive oil<br \/>\n2 tablespoons freshly squeezed lime juice<br \/>\n2 pounds russet potatoes, peeled and cut into 1-inch cubes<br \/>\n5 cloves garlic, minced<br \/>\n1 teaspoon dried thyme<br \/>\n1\/2 teaspoon dried oregano<br \/>\n1\/2 teaspoon dried basil<br \/>\nKosher salt and freshly ground black pepper, to taste<\/p>\n<p>Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Place potatoes in a single layer onto the prepared baking sheet. Add olive oil, garlic, thyme, oregano and basil; season with salt and pepper, to taste. Gently toss to combine. Place into oven and bake for 25-30 minutes, or until tender. Set aside and let cool.<\/p>\n<p>Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate and set aside.<\/p>\n<p>In a large bowl, gently mash avocados using a potato masher. Stir in cilantro, olive oil and lime juice; season with salt and pepper, to taste. Stir in potatoes and gently toss to combine.
