{"id":145,"date":"2025-03-16T01:59:40","date_gmt":"2025-03-16T01:59:40","guid":{"rendered":"https:\/\/kayeskinner.com\/food\/sunny-vegetable-salad\/"},"modified":"2026-04-04T02:46:49","modified_gmt":"2026-04-04T02:46:49","slug":"sunny-vegetable-salad","status":"publish","type":"post","link":"https:\/\/kayeskinner.com\/food\/sunny-vegetable-salad\/","title":{"rendered":"Sunny Vegetable Salad"},"content":{"rendered":"<p>5 cups broccoli florets<br \/>\n5 cups cauliflowerets<br \/>\n2 cups (8 oz) shredded cheddar cheese<br \/>\n2\/3 cup chopped onion<br \/>\n1\/2 cup raisins (I like to use golden raisins &#8211; they are a little sweeter)<br \/>\n1 cup mayonnaise<br \/>\n1\/2 cup sugar<br \/>\n2 T cider or red wine vinegar<br \/>\n6 bacon strips, cooked and crumbled (if you cut the bacon before you cook it, the crumbling is already done)<br \/>\n1\/4 cup sunflower seeds<\/p>\n<p>In a large salad bowl, toss broccoli, cauliflower, cheese, onion, and raisins.  In a small bowl, combine mayonnaise, sugar, and vinegar.  Pour over salad, toss to coat.  Cover and refrigerate for 1 hour.  Sprinkle with the bacon and sunflower seeds.
