{"id":406,"date":"2025-03-16T01:59:47","date_gmt":"2025-03-16T01:59:47","guid":{"rendered":"https:\/\/kayeskinner.com\/food\/southwestern-egg-rolls-with-avocado-ranch\/"},"modified":"2026-04-04T02:31:47","modified_gmt":"2026-04-04T02:31:47","slug":"southwestern-egg-rolls-with-avocado-ranch","status":"publish","type":"post","link":"https:\/\/kayeskinner.com\/food\/southwestern-egg-rolls-with-avocado-ranch\/","title":{"rendered":"Southwestern Egg Rolls with Avocado Ranch"},"content":{"rendered":"<h3>Egg Rolls<\/h3>\n<p>2 cups frozen corn, thawed<br \/>\n1-15 oz can black beans, rinsed and drained<br \/>\n1-9 oz package frozen chopped spinach, thawed and squeezed dry with paper towel<br \/>\n2 cups shredded Mexican cheese<br \/>\n1-7oz can diced green chiles, drained<br \/>\n4 green onions, finely chopped<br \/>\n1 tsp ground cumin<br \/>\n1\/2 tsp chili powder<br \/>\n1 tsp salt<br \/>\n1\/2 tsp cayenne pepper<br \/>\n1 package of egg roll or wonton wrappers<br \/>\n<!--more--><br \/>\nPreheat oven to 425F. Line 2 baking sheets with aluminum foil and spray lightly with cooking spray.<\/p>\n<p>In a large bowl mix together corn, beans, spinach, cheese, chiles, onions, cumin, chili powder, salt and cayenne pepper. Using a small spoon, scoop a small amount of filling onto the wrapper. Starting at a corner, carefully start to roll the wrapper. When it\u2019s slightly rolled, tuck in the two side and continue rolling to the last point. Wet your finger with water and dab a bit on the corner to seal the egg roll. Repeat with remaining wrappers and filling, placing them slightly apart on the baking sheet.<\/p>\n<p>Lightly spray the tops of the egg rolls with cooking spray and bake for 15 minutes, flipping them at least once during baking. <\/p>\n<h3>Avocado Ranch<\/h3>\n<p>3\/8 cup mayonnaise<br \/>\n3\/8 cup sour cream<br \/>\n3 Tbs buttermilk<br \/>\n1\/2 Tbs olive oil<br \/>\n1\/2 Tbs lemon juice<br \/>\n1\/2 green onion, chopped<br \/>\n1\/4 tsp salt<br \/>\n1 avocado, peeled and pitted<\/p>\n<p>Place all ingredients in a blender and pulse until smooth.
