{"id":765,"date":"2025-03-16T01:59:57","date_gmt":"2025-03-16T01:59:57","guid":{"rendered":"https:\/\/kayeskinner.com\/food\/peanutty-chicken-pad-thai-sliders\/"},"modified":"2026-03-28T03:34:28","modified_gmt":"2026-03-28T03:34:28","slug":"peanutty-chicken-pad-thai-sliders","status":"publish","type":"post","link":"https:\/\/kayeskinner.com\/food\/peanutty-chicken-pad-thai-sliders\/","title":{"rendered":"Peanutty Chicken Pad Thai Sliders"},"content":{"rendered":"<p>Patties:<br \/>\n2 pounds ground chicken<br \/>\n1\/4 cup white onion, finely diced<br \/>\n3 cloves garlic, minced<br \/>\n1\/2 cup cilantro, chopped<br \/>\n1 teaspoon Chinese Five Spice powder<br \/>\n2 tablespoons olive oil<\/p>\n<p>Peanut Pad Thai Sauce:<br \/>\n1 tablespoon cornstarch<br \/>\n2 tablespoons fish sauce<br \/>\n1\/2 cup Extra Crunchy peanut butter<br \/>\n1 tablespoon vinegar<br \/>\n1 teaspoon chili sauce<br \/>\n3 tablespoons brown sugar<\/p>\n<p>Remaining Ingredients:<br \/>\n1 cup bok choy or other Chinese cabbage, shredded<br \/>\n1\/2 cup bean sprouts<br \/>\n1\/2 cup carrots, cut into matchstick pieces<br \/>\n1\/2 cup scallions, sliced<br \/>\n20 slider rolls<br \/>\n<!--more--><br \/>\nSpray grill pan or indoor grill with non-stick cooking spray and heat to medium-high.<\/p>\n<p>Combine chicken, onion, garlic, cilantro and seasonings in a large bowl, handling as little as possible. Shape into 20 slider patties and drizzle with olive oil. Loosely cover with plastic wrap and set aside.<\/p>\n<p>Mix together cornstarch, fish sauce, peanut butter, vinegar, chili sauce and brown sugar in a small saucepan and bring to a boil. Reduce heat to low and simmer for three minutes. Remove from heat and cool.<\/p>\n<p>Place slider patties on on grill pan or indoor grill and cook 3-4 minutes, or until cooked through. Place burgers on a platter and cover with foil to keep warm.<\/p>\n<p>Combine vegetables with prepared sauce in large bowl.<\/p>\n<p>Place the bottom half of rolls on a serving platter, Top with burger patties. Spoon over equal portions of the pad Thai vegetable mixture.
