{"id":954,"date":"2025-03-16T02:00:03","date_gmt":"2025-03-16T02:00:03","guid":{"rendered":"https:\/\/kayeskinner.com\/food\/cheesecake-stuffed-strawberries\/"},"modified":"2026-03-28T03:17:46","modified_gmt":"2026-03-28T03:17:46","slug":"cheesecake-stuffed-strawberries","status":"publish","type":"post","link":"https:\/\/kayeskinner.com\/food\/cheesecake-stuffed-strawberries\/","title":{"rendered":"Cheesecake Stuffed Strawberries"},"content":{"rendered":"<p>1+ Pint of Strawberries<br \/>\n2 oz White chocolate<br \/>\nSprinkles (optional)<br \/>\nGraham crumbs <\/p>\n<p><strong>Cheesecake Filling <\/strong><br \/>\n1 8 oz Package of Cream Cheese, softened<br \/>\n3 tablespoons of sugar<br \/>\n1 teaspoon of lemon juice<br \/>\nrind from 1 lemon (optional)<br \/>\n1 cup Cool Whip or dessert topping<br \/>\n<!--more--><br \/>\nWash strawberries and dry well. Cut the tops off the strawberries and hollow them out using a small spoon. Slice a thin piece of the bottom of each strawberry so it can stand up and pat it dry with a paper towel. <\/p>\n<p>Place the chocolate in a small dish and melt on 50% power for about 15 seconds.. continue in 10 second increments until the chocolate is melted. Dip the bottom of each strawberry into chocolate and place on a parchment lined plate or pan. Refrigerate 5 minutes. <\/p>\n<p>Meanwhile, in a small bowl mix together the cream cheese, sugar, lemon juice and lemon rind if using. Fold in the Cool Whip. Place the cream cheese mixture in a decorator or into a Ziploc bag. If using a Ziploc bag, snip off a corner. Pipe the cream cheese into each strawberry.
